Sherry Production

Sherry Production is the oenological process by which fortified wines known as sherry are produced from white grapes grown in the Jerez region of Spain through complete fermentation to a base wine, fortification with grape spirit, and subsequent biological and/or oxidative ageing—typically in a criaderas y solera system—under the regulatory framework of the Denomination of Origin Jerez-Xérès-Sherry.
