Aging Under Flor
Aging Under Flor is a biological aging process in which a layer of indigenous yeast, known as *flor*, forms on the surface of wine during maturation, creating a protective barrier that limits oxidation and imparts distinctive sensory characteristics through metabolic activity, thereby differentiating it from other wine aging methods.
