Characterization of volatile aroma compounds in different brewing barley cultivars

Abstract

Principal component analysis was employed to evaluate the differences among cultivars. The results demonstrated that the volatile profile based on the concentrations of aroma compounds enabled good differentiation of most barley cultivars.
