Effect of High Hydrostatic Pressure on <i>Aeromonas hydrophila</i> AH 191 Growth in Milk

Abstract

High pressure inactivates Aeromonas hydrophila efficiently but is enhanced when combined with moderate temperature (40 °C). The biological activities of toxins from this bacterium are unaltered under these conditions.
