This objective was to investigate the effect of fermented soybean meal (FSM) on growth performance, meat quality, and antioxidant capacity in finishing pigs. Results showed that dietary FSM significantly increased (P < 0.05) the average daily gain (ADG) and nutrient digestibility. FSM-containing diet increased serum antioxidant capacity, but decreased the malondialdehyde (MDA) concentration in longissimus thoracis (P < 0.05). The FSM-containing diet tended to decrease the pH45min and increase a* (redness) value of longissimus thoracis (0.05 < P < 0.1). Moreover, FSM-containing diet increased the fat content synthesis in longissimus thoracis and upregulated lipogenic genes mRNA levels. Additionally, FSM-containing diet elevated the expression levels of myofiber-type related genes such as the MyHC I and MyHC IIa, but decreased the expression level of 4E-BP1 (P < 0.05). These results indicated that FSM supplementation is capable of improving the growth performance, meat quality, and antioxidant ability in finishing pigs.
