Limit Dextrinase
Limit Dextrinase is a debranching enzyme belonging to the glycoside hydrolase family that specifically catalyzes the hydrolysis of α-1,6-glucosidic linkages in limit dextrins, thereby distinguishing it from other amylolytic enzymes by its unique specificity for branched oligosaccharide structures generated during starch degradation.
