Abstract

I. A table of the change of weight of various foods during domestic cooking is presented. Loss of weight varied between !3 and 37% for puff pastry, 7 and 33% for grilled fish and 13 and 39% for roast meats. Green leafy vegetables generally gained weight on boiling.
