Inhibition of Salmonella gallinarum by Culture Filtrates of Leuconostoc citrovorum

Abstract

Salmonella gallinarum was inhibited at an acidic pH by a metabolite produced by Leuconostoc citrovorum. The primary inhibitor was found to be acetic acid, although lactic acid was slightly inhibitory.
