A comprehensive technical review focuses on the components and analysis of soluble dietary fiber (SDF), covering analytical methods that pertain to the characterization of SDF as well as to that of total and insoluble dietary fibers. The structures and structural characteristics of the components of SDF are illustrated and described, with specific attention given to hemicelluloses, pectic substances, and gums comprising SDF. Specific procedures for isolating dietary fiber from foods and for analyzing its components are diagrammatically detailed and discussed. Dietary fiber intakes and needs for further research are described, and a tabulation is provided for the content of non-starch polysaccharides in selected foods.(wz)
