ABSTRACT RESEARCH indicates that rice kernels are not necessarily fissured immediately after drying. Fissures are caused by (a) the grain surface readsorbing moisture from the environment or (b) the grain surface adsorbing moisture from the center of the kernel or (c) the grain surface adsorbing moisture from both the environment and from the center of the kernel. The kernel failure is a fissure resulting from an expanding surface and is not a surface crack.
