Abstract The activity of uric acid as a chain-breaking antioxidant was studied in the oxidations of methyl linoleate micelles and soybean phosphatidylcholine liposomes in aqueous dispersions at 37°C. Uric acid was found to act as a radical scavenger. Uric acid located in an aqueous phase could trap the radicals in an aqueous phase, but it could not scavenge radicals within the lipid region of micelles and liposomal membranes. The kinetics of the oxidations of lipids in aqueous dispersions inhibited by uric acid was discussed.
