ABSTRACT The peculiarities of fruit and vegetable powders production technology based on spray & convective drying methods are shown. The experimental data related to the drying kinetics of apple juice droplets as well as the production flow diagrams and the performance of a spray dryer intended for the treatment of hygroscopic pasty products are presented.
