We undertook a study to determine the intracellular protease and peptidase activity of different strains of pediococci; separate and identify different dipeptidases, aminopeptidases and dipeptidyl aminopeptidases in crude cell-free extracts of pediococci and determine their substrate specificity; determine the pattern and extent of proteolysis of milk protein by crude cel-free extracts of the bacteria; and determine growth characteristics of pediococci in milk
