Abstract

The revised edition of these tables, first published in 1945, has been expanded and a valuable new appendix added giving vitamin C values of foods which do not usually appear in such tables because their contribution of other nutrients is negligible. This publication should be of interest to everyone working in the medical field in tropical areas. For others it is fascinating to discover, on page 24, that mature locusts are inferior to termites as a source of calories but contain twice as much protein, and that tea, while slightly higher in protein content is far inferior to coffee as a source of niacin. This revised publication is a valuable addition to the reference literature in the field of nutrition.
