Abstract

THE TREND in egg production is toward a more uniform year-round egg supply. More information is needed as to the effect of season and age of the bird on the structural components and chemical composition of the egg as well as the functional properties of egg albumen. Application of these data can be made by the producer who wishes to control egg size, by the processor who is interested in altering the relative yield of white and yolk, and by the investigator who might seek to further explain the factors responsible for changes in the physical characteristics of shell eggs and egg products during storage and processing.
