Firmness is a critical aspect of apple quality. Knowledge of mechanical properties of apple flesh and intact apples is needed to develop a method to sort intact apples according to firmness. Little detailed information is available on the nonhomogeneous and anisotropic mechanical properties of apples. The objective of this study was to determine the effects of ripeness and of specimen orientation and location within the apple on failure stress, strain, and energy, and apparent modulus of elasticity (Youngs modulus). Compression tests were performed on Delicious, Golden Delicious, and Rome Beauty apples using a universal testing machine.
