Comparison of Dextran Synthesis by Leuconostoc Enzyme with Starch Synthesis by Potato Phosphorylase.

Abstract

Comparison with starch synthesis by potato phosphorylase indicates that dextran synthesis from sucrose by leuconostoc enzyme does not require the mediation of any phosphorylated sugar.
