ABSTRACT Using color data from 'Sunny' tomatoes stored under constant temperatures of 15 C, 20 C, and 25 C, relationships for Hunter Hue H, Chroma C, and Value L changes with time and temperature were derived for individual tomatoes as well as for tomato groups. Hue H was found to follow a sigmoidal curve in time with a 2nd degree polynomial in temperature for the reaction rate. Chroma C was found to be dependent on Hue H only in terms of a 6th degree polynomial in H. Value L behavior was described by a negative exponential growth curve in terms of hue H and the initial Value measurement LQ. TWO methods were devised to extend the usage of these relationships to situations where the storage temperature was varying in discrete steps.
