In response to the prevalent nutritional deficiency diseases in the first half of the 20th century, cereal-grain products fortification activities were launched in the United States close to 1940 voluntarily and through state laws and federal regulations/policies. This article presents a detailed history of the development of cereal-grain products fortification laws, policies, and movements in the United States and its territories from the mid-1930s to present.
