Abstract

Small quantities of heavy metals can have significant effects on (a) the growth of barley and hops, (b) metabolism of yeast, and (c) the physical properties of beer. Some factors which control the metal content of beer are discussed and methods for the estimation of trace quantities of metals are reviewed.
