Abstract

ABSTRACT KERNELS of macadamia nuts cured to an optimal moisture are likely to remain undamaged in cracking. Moisture influences the deformations at which kernel and shell fail. The difference between kernel and shell failure deformations was found to be a reliable kernel damage predictor, which is modeled for macadamia nut cracker design and curing management.
