Most of the methods for the estimation of peroxidase activity have been colorimetric and have utilized a variety of donors, such as pyrogallol Some methods require considerable time; some require a great deal of equipment; others require involved extraction techniques. As a result, a study was made to develop a method for determining peroxidase activity in milk having the technical advantages of speed, convenience, and sensitivity.
