Abstract Thermal analysis (TG, DTG and DTA) was carried out on wheat, rye and maize starch at low rate of temperature increase. The measurements are conducted in the air as well as under argon. Results are discussed together with those formerly published for potato starch. Differences in behaviour of starch depend on its origin and atmosphere applied.
