Abstract

Calcium deficiency has become an increasingly relevant health concern in the food industry. There is an urgent need for new effective calcium supplements. This study consisted of preparing and characterizing alginate nanoparticles loaded with collagen peptide chelated calcium. These nanoparticles can enhance calcium absorption significantly and prevent calcium deficiency. The data presented in this study can aid the food industry in developing a new ideal calcium supplement.
