Barrier, structural and mechanical properties of bovine gelatin–chitosan blend films related to biopolymer interactions

Abstract

Addition of gelatin in chitosan induced greater functional properties (mechanical, barrier) due to chemical interactions, suggesting an inter-penetrated network.
