Carbohydrate Isomerization
Carbohydrate Isomerization is a chemical process in carbohydrate chemistry whereby a monosaccharide is transformed into another isomer through the rearrangement of its functional groups, typically via an enzyme-catalyzed shift of a carbonyl group or alteration of stereochemistry at a chiral center, distinguishing it from other carbohydrate modifications by preserving the molecular formula while altering the structural or spatial configuration.
