Nuclear magnetic resonance imaging of chocolate confectionery and the spatial detection of polymorphic states of cocoa butter in chocolate

Abstract

NMR images of composite chocolate bars clearly resolve the various components present. Images of melted chocolate demonstrate the ability of NMR imaging to spatially differentiate between cocoa butter in different polymorphic states.
