During malo-lactic fermentation in red Swiss wines by a mixture of different strains of <i>Leuconostoc oenos</i> stoichiometric conversion of arginine to ornithine was observed. Evidence is presented that the reaction is linked to the urea cycle. Practical implications of those findings are discussed.
