Casein-Pellet-Solvation and Heat Stability of Individual Cow's Milk

Abstract

A linear relationship (r ----.89) was found between casein-pellet-solvation and heat stability at 135 C for individual cow milks. Casein-pellet-solvation was determined by centrifugation of whole milk at 68,000 g for 35 rain at 37 C.
