Abstract

Sensory evaluation is a scientific discipline whose principles and methods have broad application over a wide range of products. A variety of test procedures are available for measuring product differences, perceived characteristics, quality, and acceptability. Each procedure is designed to provide different kinds of information about products, each test procedure having its own strengths and weaknesses; however, not all investigators agree on how best to use those test procedures.
