chain-cleaving enzymes are important for investigating the structure and function of oligosaccharides of glycoproteins which are widely distributed in animals, plants, and microorganisms. Endo-jS-N-acetylglucosaminidase (endo-/?-GlcNAc-ase, EC 3.2.1.96) hydrolyzes asparagine-linked oligosaccharides of glycoprotein at the di-N-acetylchitobiosyl moiety without injury to either the protein or sugar chain.
