The standard procedure of determining the yolk index by separating the yolk from the albumen before measuring the height and width of the yolk is not only a time consuming job but the separation cannot be made on low quality eggs without rupturing the yolk of many of them. In an effort to overcome these two objections the Missouri Agricultural Experiment Station determined for the same eggs the yolk index in the broken out egg in natural position and then separated the yolk from the albumen and made yolk measurements. The results are shown in Table 1. The yolk index as determined by these two methods is not greatly different and since the use of the yolk index is for relative comparisons between eggs, it would appear that for practical purposes the yolk index can very well be determined by measuring the height and width of the yolk in natural . . .
