Abstract

Cyclomaltodextnn glucanotransferases (CGTase, EC 2 4 1 19) are enzymes that produce cyclodextnns CGTase Using this system,'the optimum pH of CGTasefrom B. ohbensis was determined to be 5.5. Since the product of the CGTase reaction, cyclodextrin, is directly measured by HPLCanalysis, this system should be more reliable than older methods.
