Abstract

Abstract Microbial polysaccharides are a class of water‐soluble polymers which have grown in industrial importance over the past 20 years and present special problems of postfermentation recovery. Extracellular polysaccharides of commercial interest are considered with particular emphasis on the underlying principles and problems associated with each stage of processing.
