Changes in myrosinase activity and isoenzyme pattern, glucosinolate content and the cytology of myrosin cells in the leaves of heads of three cultivars of English white cabbage

Abstract The variation in levels of major glucosinolates, myrosinase activity and the banding pattern of myrosinase isoenzymes has been investigated in three cultivars of English white cabbage. Differences were found both between cultivars and within cabbage heads. An attempt has been made to correlate these results with the differences in the distribution and structure of myrosin cells examined by light and electron microscopy. Myrosin cells were found to be similar in both distribution and structure in the three cultivars but to show variation within the cabbage heads.
